Dhania Khushk , دھنیا خشک, Coriandrum sativum Linn., Dried coriander fruits(seeds). It belongs to family “Umbelliferae /Apiaceae”. Its temperament is cold and dry in second degree. If you have severe cough chewing on coriander seeds with some sugar will help relief cough immediately.

The dry coriander fruits are seeds. In culinary contexts, the term “coriander” may specifically denote these seeds as a spice, distinct from the plant itself. Fruits description:

The variety C. s. vulgare typically yields fruits with a diameter ranging from 3 to 5 mm (0.12–0.20 in), whereas var. C. s. microcarpum produces smaller fruits with a diameter of 1.5–3 mm (0.06–0.12 in). Farmers predominantly cultivate larger-fruited varieties in tropical and subtropical regions such as Morocco, India, and Australia. These varieties have a relatively low volatile oil content, typically ranging from 0.1% to 0.4%. People commonly use them for grinding and blending purposes within the spice trade. Conversely, farmers cultivate smaller-fruited types in temperate regions. These varieties tend to have a higher volatile oil content, typically ranging from 0.4% to 1.8%. As a result, people highly prize them as a raw material for the production of essential oil.

Uses:

Dhania Khushk is available in both whole dried seeds and ground form. You can enhance the flavor, aroma, and pungency by roasting or heating the seeds in a dry pan. When storing ground coriander seed, it’s essential to grind the seeds fresh to preserve their flavor.In culinary applications, people frequently use coriander seed as a spice in garam masala and Asian curries. People often combine it with cumin in generous amounts, hence serving as a thickener in a mixture known as “dhana jeera”. Additionally, people enjoy roasted coriander seeds, referred to as dhana dal, as a snack.

Beyond Asia, coriander seed finds widespread use in the pickling of vegetables. In culinary practices, particularly in Germany and South Africa (see boerewors), the seeds are employed in sausage-making. In regions such as Russia and Central Europe, coriander seed occasionally features in rye bread recipes (e.g., Borodinsky bread), providing an alternative to caraway. Additionally, the Zuni people of North America have incorporated it into their cuisine, utilizing powdered seeds combined with chili as a condiment for meat, and incorporating the leaves into salads.
